Another day, another bake. I don’t really have all that much to say here, I just wanted to share this one because I like baking and these ones really are too good to pass up. And, for added fun, this time I can actually give you the recipe since it’s not in a published cookbook. It’s on a website that I found some… six? five? years back. When I was looking for a recipe for this exact type of cookie for reasons I don’t need to explain. Suffice it to say, my own shallow folly led me to something truly great. I’ll link the recipe below [Footnote 1]. Thus, without further ado, checkerboard cookies:

These really are spectacular in a very generic way. Like, you shouldn’t expect them to be the end all be all cookies, the best that you’ll ever have. But they’re great for a simple snack since it’s easy to reach into the tin and pop out two or twelve at a time. And while on the subject of snacking, they are also excellent tea snacks. To my mind, the best I can make for myself [Footnote 2]. They’re all the better too because they’re very easy to make. I mean. Mostly. Maybe I’m awful at getting the checkerboard pattern right, but that doesn’t affect flavor. Now the one caveat I’d put to this is that these cookies… well, they’re treats. You need to make sure to eat them a little at a time, because it’s easy to go overboard. And the recipe does call for four sticks of butter. Granted, that goes a long way because it also makes a solid hundred or so cookies, which I consider to be a benefit, but when it’s easy to eat a dozen at a time… Just enjoy responsibly, yeah? Also this batch may or may not have turned out a little weird because I forgot I was out of vegetable oil and substituted olive oil instead [Footnote 3], but they look fine and I haven’t tasted anything off, so it’s probably fine.

Footnote 1a: I do sometimes add a bit (no more than a Tablespoon) of water to help the dough cling together, but that’s the only alteration I really make to the recipe. Kind of [Footnote 3]. But I think this is more a result of the aridity of my hometown than anything else.
Footnote 1b: I will point out that there is a similar recipe in Everyday Today’s Menu for the Emiya Family (one of the DLC scenarios specifically, I believe), but I find the one in that website just a little better. I’m not sure precisely what it is, but they’re not quite the same. But! If you want to cook like Saber, then it’s there.
Footnote 2: Jaffa cakes don’t count, I don’t handmake those.
Footnote 3: While the recipe does not directly call for oil, I prefer to substitute cocoa powder, oil, and sugar for melted semisweet chocolate. Just easier that way.
